VISTA: At first glance, it shows a Light ruby, bright and transparent.

NOSE:  That seductive character of Sumoll appears: Fresh raspberry, pomegranate, sour cherry, wildflowers, Mediterranean herbs, a touch of dried leaf, and an earthy minerality

BOCA:  The acidity is expressive, the fruit is pure, the tannin is very fine but has grip, and the finish is surprisingly long for a medium-light bodied wine. An honest, elegant, and tremendously gastronomic red.

TATAKI  The Sumoll's acidic fruit enhances the sealing of the tataki and its acidity cleanses the meat's unctuous texture. An elegant, fresh, and very modern pairing.

Cod Ravioli  The salty touch of the cod and the delicacy of the ravioli pair perfectly with a fresh, medium-bodied red. The wine enhances the dish without overpowering it.

OCTOPUS LEG  The octopus with its firm texture and the Japanese garlic blend with the wine's vibrant acidity. The red fruit pairs very well with the smoky notes.

GRILLED VEGETABLES  Sumoll loves roasted vegetables. Its herbal notes and freshness make each bite deeper and more expressive.

BURRATA SALAD:  The creaminess of the burrata finds balance in the acidity of the wine. The pesto, smoked tomatoes, and red fruit of the Sumoll form a perfect triangle.

Caprese or Humita Empanada  The fried dough and juicy filling find a natural ally in a fresh, straightforward wine with good acidity. An easy, fun, and very gastronomic pairing.

Sus Scrofa is born in old plots of Penedès where the Sumoll, an almost forgotten varietal, breathes again thanks to the artisanal work of Celler Pardas.

The vines grow in a landscape of limestone, Mediterranean breezes, and poor soils, where the plant struggles and expresses itself authentically. The harvest is manual, cluster by cluster, seeking tense and balanced fruit.

Fermentation is done with natural yeasts, in tanks that allow the grape to speak for itself, unadorned. Then, the wine rests gently in concrete tanks and used barrels, refining itself without losing freshness.

Sus Scrofa is not a loud wine. It is a wine sincere, clean, vibrant, a tribute to the earth and the recovered Sumoll grape.
