BOCA: Light but surprisingly firm: clean acidity, very subtle tannin, and a medium-light body that invites another sip. The end It's fresh, fruity, and lightly spiced, reminiscent of mild licorice.
Cod Ravioli Even though it's a fish dish, the wine's light structure pairs perfectly with it: the fruit and vibrancy cleanse the texture of the ravioli and make the cod stand out without any strain.
SALMON: The wine has enough tension to balance the natural fattiness of the salmon without overpowering it. The red fruit provides an elegant contrast.
OCTOPUS LEG The wine's minerality harmonizes with the octopus's smoky notes, and its light style prevents the dish from feeling heavy. It works surprisingly well.

This Beaujolais Villages “Granite” comes from the best slopes of the appellation, in the transition between the clay-limestone soils of the south and the granitic soils of the north. Soils of granite and sand, light and acidic, with a small clay component. The climate combines oceanic, continental, and Mediterranean influences, which gives the wine liveliness and freshness.
The grape is 100% Gamay%. The harvests are done by hand with selection, the winemaking is semi-carbonic with whole clusters in raw concrete vats. The maceration lasts 8 days before pressing, and the wine is aged for about 8 months in concrete vats, aiming to preserve fruit and freshness.
The result is a red wine that very transparently expresses its terroir: granite, sand, freshness, fruit.
