This wine is born from old vines of Jaén Negro in the Alpujarra of Granada, where the altitude and poor soils provide freshness, tension, and character.

The winemaking combines carbonic maceration with a portion of more traditional vinification, which allows for the aromatic expression of the fruit to be maintained without sacrificing some structure.

The 30-day maceration provides greater extraction than is usual for this type of wine, resulting in more depth and presence in the mouth.

Spontaneous fermentation and aging in carboys aim to preserve the purity of the wine, without wood influence.
