NOSEHigh aromatic intensity. Highlights stone fruit (peach, apricot), along with hints of citrus (lime, grapefruit) and floral notes (acacia flower), as well as subtle minerality.

MouthLively, fresh, with a very balanced acidity. The fruit returns on the palate along with a very characteristic salinity. Prolonged finish, very clean and lively.

Provoleta The lively acidity cuts through the richness of the melted cheese very well.

Burrata: The fruity and slightly saline expression will complement both the creaminess of the burrata and the tomato and pesto.

The Harvest, is performed as manual for small capacity boxes (15-20Kg) to transport the grapes in perfect condition to the winery. This prevents the fruit from being crushed, oxidizing, or starting to ferment before it's desired.

The alcoholic fermentation takes place in stainless steel tanks, a temperature-controlled (approx. 15-18°C). This helps slow down the process, thus preserving both the varietal aromas and the natural acidity of the grape.
