From the rolling hills of Carrascal Payment, between 50 and 70 meters in altitude, a wine is born that captures the essence of Jerez de la Frontera with a modern perspective and subtle elegance. Planted at a density of 5,000 vines/ha on a double cordon spur-pruned trellis, this vineyard benefits from its West-facing, which mitigates the dry easterly winds and embraces the humid westerly breezes of the Atlantic.
The White albariza floor, rich in diatoms and with more than 50%% calcium carbonate, exerts controlled stress on the roots, producing grapes with thick skins, high concentrations of color, and polyphenols. The fresh influence of the ocean and the marshes of Coto de Doñana, less than 20 km away, ensures a unique microclimate that preserves the acidity and freshness of the must.
The hand-harvesting, harvested in mid-August in 15 kg boxes, ensures rigorous selection of the bunches. Alcoholic fermentation in stainless steel at 23°C respects varietal purity, followed by malolactic fermentation in French oak barrels, which adds roundness.
Wine ages 10 months in 500 L French oak barrels, achieving perfect harmony between fresh fruit, creamy woody notes, and a lively structure. The result is a new-generation Sherry: fresh, mineral, and complex, with a unique nobility that speaks of its terroir.
