Mimetic it is much more than a wine: it is a sincere expression of the wild and vibrant surroundings of Calatayud, in Aragon. Born from ungrafted vines at high altitudes—between 750 and 1,000 meters—on clay soils with pebbles, this red represents the identity of a region still largely unexplored but full of emotion.
Its production begins with respectful and traditional viticulture: three-arm gobelet pruning, no ground cover, and selective harvesting. After a 3-day cold pre-fermentation maceration, fermentation with native yeastsit lasts for two weeks, respecting the wine's genuine character.
The 2022 vintage brought average yields and perfect ripeness, marked by the thermal contrast between warm days and cold nights. This oscillation favored a Excellent aromatic maturation, giving the wine great freshness, balanced structure, and a very refined natural acidity.
The breeding is done during 6 months on their fine lees in concrete tanks, with periodic stirring. This process imparts a fluid, silky, and enveloping texture, where the fruit presents as ripe, juicy, almost liquefied, with sweet and perfectly integrated tannins.
