From the purest expression of these high-altitude vineyards is born Settling Tanks Selection, a Verdejo with character, full of nuances, freshness, and complexity. A wine that captures in every glass the landscape, climate, and know-how of generations of winemakers in the heart of Castilla.
Located on the high plateau of the meseta, 750 m above sea level, in vineyards planted on trellises 20 to 30 years of age, Chapirete comes from a selection of the best Verdejo grapes from their sandiest plots, which are low in fertility but yield extraordinary varietal expression. The harvest, carried out nocturnally and mechanically, takes place at the optimal point of ripeness to preserve the grape's full aromatic richness, as well as that lively character so prized in Verdejo.
After a careful elaboration, the free-run must, obtained at low pressure in an inert atmosphere to avoid any oxidation, ferments in stainless steel at a controlled temperature (for 10-12 days) to fully express the identity of the varietal. Finally, the wine rests on its lees, which provides mouthfeel complexity, a rounder structure, and a richness of nuances in every sip.
Chapirete Selección sobre Lías is the purest expression of high-altitude Verdejo. A wine intended for both aperitifs and accompanying a variety of cuisine such as fish, rice dishes, seafood, or seasonal vegetables, but also to stand out alongside more elaborate dishes where freshness, complexity, and structure are the stars in the glass.
