VIEWPale but intense golden yellow, with slight greenish reflections at the rim. Clean, bright, and with a dense tear, foreshadowing structure on the palate.

NOSE: Very expressive and complex. First, the stand out notes of ripe stone fruit, like peach or apricot, along with hints of candied citrus, ripe pomelo and lemon peel. The wood, very well integrated, contributes aromas of vanilla, nuts, butter y a subtle smokiness, without masking the varietal character of the Verdejo at any point.

MouthFrom the start, it's friendly but with strength, showing a lively acidity that provides freshness. The wood provides body, complexity, and roundness, with a slightly creamy texture on the palate. Ripe fruit returns in the mouth along with those touches of wood, prolonging the finish in a Long, balanced, and very pleasant finish.

This Verdejo has aromatic complexity, a lively yet balanced acidity, and a rounder structure thanks to the oak. This gives it very high versatility at the table, pairing well with appetizers as well as certain heartier main courses, without overpowering them.

Provoleta
The creaminess of the cheese and the oak aging of the Verdejo create a very pleasant harmony.

BurrataThe Burrata, with the freshness of arugula and semi-dried tomato, will benefit from the acidity of Verdejo, which provides liveliness without leaving behind the creaminess on the palate, created by both the cheese and the wine's time in wood.

Goat Cheese SaladGoat Cheese, with lettuce, walnuts, bacon, and a honey mustard dressing, will also find a worthy companion at Chapirete: the acidity cuts through the richness, but the wood provides complexity to stand out alongside the more intense character of the goat cheese.

Black Angus Flank Steak Brioche: The richness of the meat, along with the acidity of the wine, provides a very pleasing balance.

Argentine Beef Tataki The complexity of wood in wine blends with the umami of soy sauce and truffle.

Oxtail The wine's structure, thanks to its time in barrel, can hold its own against the richness of this stew.

Grilled Salmon The lively yet rounded acidity cuts through the richness of the salmon, while notes of wood and vanilla create a synergy of flavors.

Octopus leg The oak aging of this Verdejo provides complexity on the palate, with slightly smoky notes that harmonize perfectly with the grilled aroma of the octopus. Furthermore, the lively yet rounded acidity cuts through the richness of the potato and Robuchon puree, cleansing the palate for each new bite.

Vegetable grill The herbal and slightly toasted expression of the wood in the Verdejo will pair very well with the smokiness of grilled vegetables.

Barrel-Aged Fermented Chapirete — The Historical Essence of Verdejo Elevated to its Highest Expression

This exceptional white is born from the delicate union between tradition and technique, crafted with 100% Verdejo grapes from unique pre-phylloxera vineyards in the DO Rueda. Located in the Pago de Chapirete, in Alcazarén, these vineyards, over a century old, cultivated with ecological practices and grown in goblet, thrive on sandy soils poor in organic matter but rich in silica, conditions that have allowed them to resist phylloxera and retain an original and genuine character.

Manual harvesting, ensuring grape integrity with small crates and strict selection both in the vineyard and winery, guarantees that only the best berries reach fermentation. The process takes place in 500-liter French and Central European oak barrels, where the must undergoes a delicate aging process that perfectly balances the typical freshness and aromatic complexity of Verdejo with the elegant and subtle notes characteristic of the wood.

The result is a white wine that surprises with its aromatic intensity, where traditional notes of white fruit, Mediterranean herbs, and citrus stand out, enriched with toasted, vanilla, and spice undertones from the barrel. On the palate, it presents a silky, round volume, with a long and persistent finish that invites you to savor every sip.

This barrel-aged Chapirete is ideal for those seeking a white with personality, capable of accompanying sophisticated dishes like chimichurri sweetbreads, oxtail cannelloni, or even a board of artisanal cheeses with dried fruits.
