MouthNoticeable freshness, fine and precise tannins, medium body, and a long, clean, and slightly saline finish. An elegant, tense, very vertical wine with pure fruit.

Beef Tataki  The wine's freshness enhances the juiciness of the tataki and highlights the toasted flavors without overpowering them. The acidity cleanses the palate after each bite.

Vacío Brioche: The sweetness of the bread and the richness of the filling find balance in its pronounced acidity. Fine tannins complement the meat without drying the mouth.

Cod Ravioli The wine provides tension and lightness, refreshing the richness of the filling and enhancing the salty notes of the cod.

Sweetbreads The crispy texture of gizzards calls for a vibrant wine. Here the acidity cuts through the fat and the soft tannin accompanies without overpowering.

Provoleta The minerality of the wine “lifts” the intensity of the cheese and prevents the palate from becoming saturated. Pure freshness.

Vegetable Grill The floral profile and red fruit pair well with roasted vegetables, enhancing natural sweetness without clashing.

Empanadas The dough and the juicy filling find a sweet spot in a light red with good acidity. They feel more “alive” with every sip.

Entrails It's a flavorful cut but not overly fatty. The wine, being elegant and fresh, pairs without overpowering and enhances the juicy tenderness of the skirt steak.

A Merced 2021 is a wine born from the emotional bond of the Michelini i Mufatto family with San Lorenzo, a small corner of Bierzo where they settled in 2015 and which marked them forever. High slopes, soils of slate and quartz, cold forests, and a climate that demands patient work. That's where its old head-trained vines come from, more than 80 years old, which produce very little grape but with unique concentration and purity.

The wine is made with an almost artisanal sensibility:

Half of the clusters are foot-stomped - as was done before - and the other half are gently destemmed. Fermentation begins spontaneously in wooden vats and maceration is long, following the natural rhythm of the wine. Afterwards, it rests for a year in used French barrels, allowing the wood to accompany, but never dominate.

The 2022 vintage was colder and wetter than usual, yielding taut, precise, and elegant wines with vibrant acidity and a continental character that defines their personality.
