Inseparable 2021 – Gualtallary Clásico
Born in the monastery's original vineyard, Inseparable comes from two small plots of barely 2 hectares, where the vine is cultivated in traditional espalier on low-yielding sandy and calcareous soils. This unique terroir, which we define as Gualtallary Classic, it gives rise to a wine that accurately reflects the identity of this exceptional region: freshness, purity, and mineral character.
The 2021 vintage was cool and wet, reminiscent of the elegant 2016 harvest. The climatic conditions, with a dry and stable spring and slow ripening accompanied by cool days, favored a late manual harvest of perfectly balanced grapes.
Fermented in small cement vats at low temperatures with a prolonged maceration of 30 days, the wine was aged for 12 months in the same vessels. No wood aging, no filtering or clarification, Inseparable 2021 is an honest and profound expression of its origins.
