SEARED BEEF TATAKI Angelita's profile of light red fruit and very fine tannins complements the smoothness of the tataki, while its freshness cleanses the palate of the toasted exterior.
Cod Ravioli This light and agile wine allows the cod to shine without the wine's structure overpowering it. The fruit and fresh acidity make it perfect for more delicate dishes.

Entraña The skirt steak is flavorful but not excessively fatty, the delicate tannins of the Angelita complement the fiber of the cut without toughening it, and the acidity adds freshness. A juicy, balanced, and surprisingly harmonious pairing.
Angelita del Challao 2021 is born from the work of uniting plots of old vineyards in Labastida under the guidance of Manu Michelini and Carlos Fernández. Their goal: to create a village wine that tells the story of the territory.
The base is mostly Tempranillo (~80-85%) combined with Garnacha, Graciano, Mazuelo, Viura, Garnacha Blanca, and other local varieties.
We work with minimal intervention: whole clusters, fermentation in concrete, aging for approximately 20-21 months in used barrels (French and Austrian oak) and large foudres.
The result is a red that breathes the spirit of Labastida: its clay-quartz soil, its moderate altitude, its Atlantic-continental climate, and the energy of those who make it.
